Coco Farm Winery, at the foot of the vineyard held in the 1950s, produces 100%Japanese grapes. In private fields, we do not use herbicides or chemical fertilizers, and fermentation is mainly wild yeast. I listen to the voices of grapes and make wine carefully (from the official Instagram)
After fermentation with wild yeast, it is transferred to a barrel and malolactic fermentation by wild lactic acid bacteria. Then aged in oak barrels. A slight blue smell on the black fruit. The acid and tannin are harmonized by barrel aging.
