Soryu Grape Sake is founded in 1899 and is one of the most traditional wineries in Koshu and Katsunuma. The field is 350 meters above sea level and a plastic flat ground consisting of gravel -quality soil. Grape varieties are cultivated by Kai Noir, Chardonnay, Merlo, and Petit Verd, including Koshu (from the winery website).
A scent reminiscent of the forest nature. Smooth tannin. The sourness and bitterness are calm.
